Blanched Kale with Candied Walnuts and Blue Cheese


Over the summer Brian and I blanched and froze bunches of kale for use during the winter. In an attempt to use up what is in my freezer I made this salad for dinner the other night. It was a winner. So delicious.

Blanched Kale with Candied Walnuts and Blue Cheese


You Will Need

1 cup frozen, blanched kale (you can try substituting spinach)
1/2 cup walnuts (or be creative)
2 tbs butter
2 tbs maple syrup
1/4 cup crumbled blue cheese

Makes 2 servings


To start, place your butter in a small pan over medium low heat. Melt thoroughly. Add nuts. Stir to coat. Add in maple syrup. Continue to stir until nuts begin to caramelize. Remove from heat. 

Place frozen kale in pan with a little bit of water. Heat until kale is warm but not hot. Remove from heat. Tilt the pan sideways and using a spoon press out any excess water from the kale. 

Sprinkle on candied walnuts and blue cheese.
